Ceramic vs Teflon non-stick: how the coatings really compare
Non-stick is a coating category, not a single material. Ceramic and PTFE behave differently in heat, wear differently over time, and suit different cooking styles — and most coating failures come from how the pan is used, not which type it is.
What each coating actually is
PTFE — commonly known by the Teflon brand name — is a fluoropolymer film applied in layers and cured onto the pan. Ceramic coatings are silica-based sol-gel finishes, closer to a very thin glass layer, applied and cured in a similar way.
Both are surface treatments over a metal body. The body matters as much as the coating: heavier, better-conducting bases hold heat steadily and avoid the hot spots that destroy coatings.
Heat behaviour is the real difference
Ceramic tolerates higher short-term temperatures, but its non-stick performance typically fades sooner with repeated high-heat use. PTFE holds its release properties longer under normal cooking, but should not be taken to high dry heat.
In practice, both coatings last far longer on medium heat with a little fat in the pan. Preheating an empty non-stick pan on full heat is the single most common way people ruin one.
Safety questions, answered plainly
PFOA, historically used in manufacturing PTFE, has been phased out of cookware production, and reputable modern PTFE pans are made without it. Concerns about PFAS chemistry more broadly are why many buyers now prefer ceramic, which is not fluoropolymer-based.
Whichever you choose, the practical safety advice is the same: cook at moderate temperatures, ventilate the kitchen, never heat a coated pan empty on high, and replace a pan once the coating is scratched through, flaking or blistered. If you have specific health concerns, check current guidance from your national food safety authority.

Lifespan expectations
No coating is permanent. A well-treated non-stick pan is a multi-year item, not a lifetime item, and the honest way to compare pans is by how well the body is made, how evenly it heats and how the handle is fixed — because those determine whether the coating is asked to work in ideal conditions or fight hot spots every time.
